Nothing hits the spot in summertime better than a glass of ice cold homemade lemonade. And personally, I love adding extra fruits like berries and peaches to make my lemonade extra sweet and give them a fun, unique flavor twist. I’ve made this recipe several times at my house this summer and each time the drinks hardly last two days because my family just adores them, and always begs for more! It’s the kind of treat that everyone can enjoy which makes it a party favorite and earns it a gold star in my book!
The three flavors: classic strawberry, blueberry & peach, and raspberry mint.
What You Need (Makes 6-8 servings):
~16 lemons at room temperature
2 cups sugar
2/3 cups sugar, divided
1/2 cup sugar
1 peach- ripe
1 pint blueberries
1 pint raspberries
1 cup strawberries
Handful of fresh mint leaves
3 mason jars
Extra fruit for garnish (optional)
Plain lemonade base
Start by mixing 2 cups sugar and 2 cups water in a saucepan, bringing to a boil. This will be the syrup for your plain lemonade. Continue boiling until all sugar has dissolved, then set aside.
Roll each lemon between your hands, using enough pressure to soften it (this will make them easier to squeeze). Then cut each lemon in half and squeeze into a measuring cup until you have 2 cups of lemon juice. If you notice that a few seeds fell into the cup, be sure to strain them out before pouring the juice in the pitcher.
Next, add the syrup into your pitcher of lemon juice and stir thoroughly. Fill the remainder of your pitcher with cold water and ice.
Remove tops from strawberries and cut into fourths. Put into a bowl, add 1/3 cup sugar, and stir. Let sit for ~45 minutes, or until you can see the strawberry juice forming at the bottom. Once enough liquid has formed, strain the juice into a small bowl and toss away the solid fruits.
Raspberry mint syrup:
Mash 1 pint of raspberries together in a bowl with 1/3 cup sugar. Add in a handful of mint leaves, being sure to mix them in well without smashing them up. Let stand for ~20 minutes, then strain juice into a small bowl and toss away any solids.
Blueberry peach syrup:
Chop the peach into bite sized pieces (it is okay to leave the skin on) and put into a small saucepan. Add 1 pint of blueberries and 1/2 cup sugar and stir. Optional: you can also add a splash of water or lemon juice to the mixture to help it mix better. Put the saucepan on the stove and simmer on low heat until the mixture has thickened (about 20 minutes). Then strain the juice into a small bowl and once again toss away any solids.
Once your syrups are finished, take your mason jars and fill them with ice. Then pour the plain lemonade into each jar. Next, add one spoonful of the flavored syrup into your mason jar and stir. Taste and feel free to add more if needed! Garnish the drinks with a lemon slice on top and the extra fruit that corresponds to your flavor. Then finish them off with a cute straw and enjoy!
Of course, if you don’t want to individualize the drinks, you can just as easily pour one entire fruit syrup mixture into the pitcher and make a big batch of your favorite flavor! That’s what makes this recipe so fun, there are so many ways you can adapt it and personalize it that it makes it perfect for parties and gathering as well as simple days spent lounging at home.
Whichever way you choose to serve it, everyone is sure to declare it as the best lemonade they’ve ever had!
